Job Description
One of the most popular bakery cafe chains in the United States is Panera Bread. The bakeries around the country that bake fresh bread, pastries and other baked goods every day. Our Houston Post Oak location is looking for a Baker for full time early morning shifts.
This is real bakery work. You are available in the kitchen before most people wake up, mixing dough, shaping loaves, loading ovens and making sure everything is baked fresh before the store opens. If you have experience working in a bakery or kitchen, that’s great. Otherwise, Panera will train you. “What they really want is somebody who shows up on time, works clean and takes pride in what comes out of the oven.”
What a Typical Day Looks Like
You will start early. Most shifts begin between 4am and 6am so the bread is ready when customers walk in. Here is what you will be doing from the moment you clock in:
- Mix and prepare dough following Panera's recipes and portioning guidelines
- Shape loaves, rolls, bagels, and pastries by hand and using bakery equipment
- Load and monitor ovens — timing and temperature control matter here
- Check baked items when they come out and make sure they meet quality standards
- Slice, pack, and label finished products for display in the cafe
- Keep your work area and equipment clean throughout the shift — food hygiene rules apply at all times
- Rotate stock properly and follow first in first out rules for ingredients
- Let your supervisor know when supplies are running low so nothing runs out mid shift
- Help with receiving deliveries and checking ingredients against the order sheet

Pay and Shifts
- $15.00 – $18.00 per hour based on experience
- Full time: 40 hours per week
- Monday to Saturday — early morning shifts starting between 4am and 6am
- Most bakers finish by early afternoon
- Weekly pay direct to your bank account

Q1: Do I need to already know how to bake professionally?
No. Panera has their own recipes and training process. If you have baked before — even at home — that helps. But they will teach you their methods from scratch if needed.
Q2: What is the earliest I would need to start?
Some shifts begin at 4am. This is the nature of bakery work — bread needs time to rise and bake before the store opens. If early mornings are not possible for you, this role may not be the right fit.
Is there room to move up from a baker role?
Requirements
- Right to work in the United States
- 18 years or older
- Able to lift bags of flour and heavy mixing bowls — up to 50 pounds at times
- Comfortable working in a warm kitchen environment for a full shift
- Basic math for measuring and portioning ingredients correctly
- Able to follow recipes exactly — improvising in a commercial bakery causes waste and inconsistency
- A Food Handler certification is preferred — Panera can advise on getting one if you do not have it
- Previous bakery or kitchen experience is a plus but not required
